1/2 cabbage, shredded
2 carrots, grated
2 celery sticks, thinly sliced
1/2 red capsicum, finely diced
1/2 cup egg mayonnaise
1/3 cup thickened cream
1 1/2 tablespoons lemon juice
Salt and pepper
Method:
- Wash hands.
- In a large bowl, combine all of the vegetables.
- In a small bowl, combine the mayonnaise, cream and lemon juice. Season to taste with salt and pepper.
- Pour the dressing over the vegetables and combine well.
- Cover with cling wrap and place into the fridge for at least two hours before serving.
SMARTY TIP: Red cabbage is fantastic in this coleslaw and can also be mixed half and half with green cabbage.
