FRUITS OF THE RAINBOW
Red fruit: Raspberries, Strawberries
Orange fruit: Rockmelon, peaches, apricots, mango
Yellow fruit: Mango, pineapple, star fruit
Green fruit: Kiwi, green grapes, honeydew melon
Blue fruit: Blueberries
Indigo fruit: Plums
Violet fruit: Mulberries, blackberries
100mL creme fraiche
1 tbs honey
1/2 tbs lime juice
- Wash hands.
- Wash the fruit and prepare them by slicing or chopping them into bite-sized pieces. Keep them in their separate colours.
- In a small bowl, combine the creme fraiche, honey and lime juice.
- Choose four attractive glasses. Place the fruit into the glass in layers starting with the violet fruit, then the indigo, blue, green, yellow, orange and red so that they are in the order of the rainbow.
- Spoon a dollop of the creme fraiche dressing on to the top of each glass of fruit salad.
- Serve immediately.
