6 boiled eggs
1/4 cup mayonnaise
1 tbs white vinegar
1 tsp mustard powder
Bunch of chives
1 red capsicum
Salt and pepper
Method:
- Wash hands.
- Peel the eggs and use a sharp knife to cut them cleanly in half.
- Carefully remove the yolks from the eggs and put them in a bowl. Put the whites on a tray, being careful not to break them.
- Use a fork to mash the yolks. For small kids, it might be easier to press the yolks through a sieve using a ladel or big spoon.
- Add the mayonnaise, vinegar and mustard powder to the yolks and combine them well until they are creamy. Season with salt and pepper.
- Use two teaspoons to scoop small amounts of the yolk back into the whites. Smooth off the surface.
- Use scissors to cut the chives into 3cm long lengths. Poke these into the yolk so that they make hedgehog spines and put a tiny piece as the nose.
- Dice the capsicum into small squares and use these as eyes.
- Arrange the hedgehogs on a plate of lettuce.
TIP: Very fresh eggs don’t peel very well so it is better to use ones that are a few weeks old but still in date. For fussy eaters, just mix butter or mayonnaise into the yolks with a touch of salt. Egg yolks combined with butter and curry powder are also delicious.
